  • Microgreens are grown in soil or another growing medium. They’re harvested by snipping the stem and leaves, usually after 7–14 days of growth.

  • Sprouts are crunchy and watery. 

  • Microgreens have more developed leaves, a tender texture, and much bolder flavors — peppery, sweet, citrusy, or earthy, depending on the variety.

Because sprouts are grown in warm, moist environments without light or airflow, they’re more prone to bacteria. Microgreens are grown with light, air, and clean soil, making them a safer option.
